Praiseworthy Puddings; These tasty treats won’t add inches to your children’s waistlines

Photo of shocked boyDoes your child have a sweet tooth? Most do, and that can be a problem if you’re keeping an eye on your weight – or theirs. But a pudding made from scratch can help satisfy your cravings for a tasty treat without adding pounds.

These recipes come from The New Family Cookbook for People With Diabetes, but anyone who appreciates delicious, low-fat desserts will enjoy them.

Bread Pudding With Raisins

3 slices day-old white bread, cubed
1/2 cup raisins
2 large eggs, slightly beaten, or 1/2 cup egg substitute
2 cups skim milk
2 tablespoons sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt

Preheat oven to 350 degrees. Prepare a 1 1/2 quart baking dish with nonstick cooking spray. Mix bread cubes and raisins in dish.

Combine remaining ingredients in a medium bowl, pour mixture over bread and raisins, and stir to blend. Set filled baking dish in a shallow pan on middle rack of oven. Pour hot water into pan to a depth of 1 inch around baking dish.

Bake 45 to 55 minutes, or until knife inserted in pudding comes out clean. Remove pan and serve warm or chilled.

Serves six. Each serving contains 139 calories, 2 grams fat, 72 milligrams cholesterol and 229 milligrams sodium.

Orange Tapioca

1 1/2 cups skim milk
3 tablespoons quick-cooking tapioca
1 large egg, beaten, or 1/4 cup egg substitute
1 tablespoon sugar
pinch of salt
1/2 cup orange juice
1/2 teaspoon vanilla extract
1 orange, peeled, seeded and diced

Combine milk, tapioca, egg, sugar and salt in a small nonstick saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil.

Remove from heat. Add orange juice slowly, stirring constantly. Return to heat, stirring until mixture boils again. Remove from heat.

Let cool 10 to 15 minutes, stirring occasionally. Mix in vanilla and diced orange. Chill at least two hours before serving.

Serves four. Each serving contains 117 calories, 1 gram fat, 55 milligrams cholesterol and 98 milligrams sodium.
